Welcome to summer and to #SundaySupper
This is my first (of hopefully many) weeks participating in the #SundaySupper movement, started by Family Foodie, to bring the family back to the dinner table. Every Sunday, a group of amazing bloggers come together to bring you food from our kitchens, give you tips, and inspire you to get your family back around the dinner table. Each week, #SundaySupper focuses on a specific theme. The theme for this week is #BeatTheHeat.
I don't know what it's been like where you are, but here - it's hot. The last few days have been better, but we're headed right back toward crazy hot next week. I'm not one for standing over a hot stove for an hour or having my oven pumping hot air into an already hot house, so I've been looking for ways to keep my family fed with low cook/no cook recipes or things I can make ahead (like in the morning) and serve later for dinner.
This week for #SundaySupper, I have a Cold Cucumber and Rice Salad. The beauty of this recipe is that it's low cook and can be cooked ahead. It's the perfect accompaniment to grilled chicken or pork (we had pork chops with ours) and some grilled veggies.
Cold Cucumber and Rice Salad
- 3 cups cooked rice (white or brown)
- 1 medium seedless cucumber, diced
- 1/4 cup diced sweet onion
- 1/2 cup white vinegar
- 3 tablespoons granulated sugar
- 2 teaspoons fresh or freeze-dried dill
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
The hardest part of this whole process is cooking the rice. That's it. Once you've cooked and cooled your rice, it's simply a matter of mixing everything together and allowing it to sit in the refrigerator for a few hours before serving. It's cool, has a nice crunch, and a little bite. For a variation, you can also add halved cherry or grape tomatoes.
